It really does not matter. Homemade videos are not the best of quality and they are on the fire right now so I would not worry about that.
I can not tell how much you will earn because there are many factors to take into consideration. I can just assure you that $2000 a month is doable in less than two years.
If I were you, I would not hire the SEO guy. You should just focus on generating new content and eventually, you will slowly learn everything by yourself. I would just post new videos for a few months and if you do not get any results then you may hire someone.
I believe that you can rank any domain with any extension (unless it is something really weird) and I have even seen some xyz domains (among other new extensions) rank pretty high on the Google.
It is better to have the com domain because most of the surfers will automatically type in your site name and the com extension. So the com is the best choice, but you can create a successful site with other extensions as well.
I think that the granny niche is less popular so there is certainly less competition in that niche so you may go with that one. Generally, you should start an adult site in a less saturated niche, because it will be way easier and faster to rank such a website.
